Some of the best (and spiciest) food I’ve ever eaten was in Sichuan, China while studying abroad. The mouth-numbing kick of the local mala seasoning was like nothing else in the world, ultimately inspiring this Sichuan Chili Crisp MaxJerky. It’s not quite as hot as the hot pot in China, but the unique mala flavor is undeniable.
